This Easter, celebrate tradition and innovation with Gratifico’s Orticoni tortelloni, a Bolognese brand blending the heritage of fresh pasta with a global vision. The stars of the festive table are the Orticoni: green nettle-infused tortelloni filled with ricotta and parsley, perfect for sharing moments of togetherness. The choice of nettle is no accident—historically used to color pasta, this nutrient-rich plant with detoxifying properties bridges past and present. The Orticoni shine in classic recipes like butter and sage, but also in bold pairings such as Genovese pesto with datterini tomatoes, a chef-recommended balance of elegance and simplicity.

The proposed recipe merges tradition and creativity: a pesto made with fresh basil, 24-month-aged Parmigiano Reggiano, Sardinian pecorino, pine nuts, and Ligurian EVOO, blended in a mortar with garlic and salt. Quartered datterini tomatoes, sautéed with pesto, accompany the al dente Orticoni, creating a dish that highlights Mediterranean freshness and flavor.
Behind this culinary experience lies Gratifico, the flagship brand of L’Arte della Pasta S.r.l., founded in Minerbio in 2015 by master pasta artisans and visionaries. Silvano Bellei, Silvano Galici, and Alessandro Ritelli transformed a passion for Bolognese tradition into an innovative project, investing in Industry 4.0 technologies and doubling production in under a decade. “We wanted a name that conveyed gratification, like the sensory embrace of grandparents and children gathered around a pasta board,” shares one founder. Evolving from “Ti gratifico” to “Gratifico”, the brand embodies an experience marrying craftsmanship and quality, with a rough-textured dough honoring traditional methods.

Today, Gratifico expands beyond Italy through its partnership with Eataly, landing in the UK, France, and Germany, both in stores and restaurants of the retail giant. In 2025, the brand will join “The Italian Show” in Munich (March 24) and Paris (April 2), events organized by I Love Italian Food to promote authentic Italian cuisine worldwide.
Guided by a new generation—Ilaria Ritelli in marketing and Elena Galici in production—the company bridges heritage and future. “We bring fresh pasta not just as a product, but as a symbol of memory and shared moments,” they emphasize.
